Peppery Chicken Pasta Salad

  • SALAD:
  • 2  cups  uncooked farfalle (bow tie pasta)
  • 1/2  cup  (1-inch) cut green beans
  • 1  cup  chopped skinless, boneless chicken
  • 1 capsicum shopped
  • 1  red bell pepper, chopped
  • 1 Tomato - Thin long slices

  • 1-2 teaspoons Olive Oil 
  • 2  teaspoons  fresh lemon juice
  • 1/2  teaspoon  freshly ground black pepper
  • Salt - as per taste


To prepare salad, cook pasta in boiling water 11 minutes or until cooked. Add green beans during final 5 minutes of cooking. Drain and rinse pasta mixture under cold water. Place pasta mixture, chicken, capsicum,  bell pepper, and tomato in a large bowl; toss gently to combine.

To prepare dressing, combine Olive Oil and remaining ingredients, stirring with a whisk. Drizzle over pasta mixture, tossing gently to coat.

Serve with Garlic Bread :) 

If you are a Veggie, EXCLUDE Chicken and you can have a fantastic Veggie Salad.......Also you can make this salad with your choice of Pasta :) :)
