Tomato - Penne Soup

Hi, Today i made this soup for dinner and we liked it a lot :)  I just made as per my creativity and thats what i liked about it.... 
I forgot to take a pic so not uploading it ...... Do try this and let me know....

Ingredients:
4-5 Ripe Tomatoes
1 teaspoon Olive Oil
Mixed Herbs - 1 Pinch
1/2 cup - Penne Pasta
Salt , Pepper, Red Chilly Powder- According to taste
1/2 cup - Green Peas

Method:
1. Cut Tomatoes in big pieces and add some water to it. Keep in Microwave for 6-7 mins so they are cooked properly.
2. Simultaneously, boil the pasta in water and keep it aside. Dont throw the water, use it for soup.
3. Once the Tomatoes are cooked, blend them and make a puree.
4. In a container, add 1 teaspoon of Olive Oil. Once heated, add mixed herbs, pasta - remove the water and keep aside; and salt. Saute for sometime.
5. Add Tomato puree and water to this.
6. Add Green peas to this.
7. Add Pepper and Red chilly powder according to your taste. 
8. Boil for 5-10 mins and garnish with coriander and mint leaves. 

When you are on diet and want to have something healthy and filling, go for this :)
Also, this soup can be made as a starter which will fill your stomach....

Peppery Chicken Pasta Salad


Ingredients:
  • SALAD:
  • 2  cups  uncooked farfalle (bow tie pasta)
  • 1/2  cup  (1-inch) cut green beans
  • 1  cup  chopped skinless, boneless chicken
  • 1 capsicum shopped
  • 1  red bell pepper, chopped
  • 1 Tomato - Thin long slices

  • DRESSING:
  • 1-2 teaspoons Olive Oil 
  • 2  teaspoons  fresh lemon juice
  • 1/2  teaspoon  freshly ground black pepper
  • Salt - as per taste

Preparation

To prepare salad, cook pasta in boiling water 11 minutes or until cooked. Add green beans during final 5 minutes of cooking. Drain and rinse pasta mixture under cold water. Place pasta mixture, chicken, capsicum,  bell pepper, and tomato in a large bowl; toss gently to combine.

To prepare dressing, combine Olive Oil and remaining ingredients, stirring with a whisk. Drizzle over pasta mixture, tossing gently to coat.

Serve with Garlic Bread :) 

If you are a Veggie, EXCLUDE Chicken and you can have a fantastic Veggie Salad.......Also you can make this salad with your choice of Pasta :) :)

Tomato Crostini

Ingredients:
1 Footlong Garlic Bread 
For Mixture:
3-4 finely chopped Garlic
1-2 finely chopped Tomatoes
Sun Dried Tomatoes - as per your requirement
1 teaspoon Olive Oil
1 teaspoon Mixed Herbs / Oregano
Jalapenoes - as per your requirement

Method:
1. Cut thin slices of Garlic Bread and toast them ( try to do Medium Roast)
2. Mix all the ingredients listed in "For Mixture" section
3. Put 1-2 teaspoons of mixture on each Roasted Slice of Garlic Bread

Your CROSTINI is ready..... Simple isn't it !
You can try your own recipe by adding Cheese ( if you love cheese).

I got loads of Compliments for this one ..... Specially from my Hubby :D

Chili Pineapple - Raw Mango Salad

Ingredients:
Pineapple pieces (dipped in Sugar Syrup) - 500 gms
Raw Mango - 1 piece
Thai Sweet Chili Sauce - According to your taste
Chili Flakes - 2 pinch


Method:

1. Drain the syrup from Pineapple Pieces and put in one container
2. Cut Raw Mango into long thin pieces and Add in the Pineapple pieces.
3. Add Thai Sweet Chili Sauce into the container - 3 to 4 teaspoons
4. Add 2 pinch Chili Flakes into the container
5. Garnish the way in the picture - this is the way i did... and it was appreciated by everyone and i was given loads of Compliments :D

Italian Salad - Pasta with Thousand Island Dressing

Ingredients:
Pasta ( fusilli ) - as per your requirement
Thousand Island Dressing
Jalapenoes - as per your choice
Bell Peppers - red & yellow
Chicken pieces - boneless ( 1/2 cup )
spring Onion - finely chopped

Method:
Take a container with water in it ( pasta should soak ) and keep on medium flame. Once the pasta is cooked, blanch it. Similarly, cook the chicken pieces and keep aside.
Take the cooked pasta in one container. Mix Bell Peppers, jalapenoes, chicken in pasta. Add thousand island dressing to this ( so that pasta is covered properly with this) and mix well. You can also add Lettuce, Brocolli etc as per your choice to this. Add cooked chicken pieces and mix well.
Garnish with Finely chopped spring onion and serve this healthy salad to all :)

Simple and very very easy to make.

Tip: You can try this with different dressings if you dont like thousand island or you can add different dressings to this and make your own recipe... But dont forget to share with me :)

Pomfret Tawa Fry - Goan Style



Ingredients:


Pomfret Fish - Horizontal Pieces -- 500 gms
Oil - As per requirement

For marination:
Red Chilly Powder - 2 heaped spoons
Turmeric Powder - 1/2 spoon
Ginger & Garlic paste - 1/2 spoon
Garam Masala - 1/2 spoon
Lime juice - 2 - 3 spoons
Salt - As per taste
Rice Rawa - If not available then grind rice in mixer :)



Method:
Step 1: Wash the fish pieces in running water. Add salt to these pieces and keep aside.
Step 2: Take a dish and MIX Red chilly powder, turmeric powder, ginger-garlic paste, garam masala, lime juice and salt. Make a semi-solid paste of this mixture by adding little water to it.
Step 3: Once masala is ready, take the Fish pieces and wash in running water. And apply Masala to these pieces and marinate for 15-20 mins.
Step 4: Take a frying pan and add oil to it. Once it is hot, take Fish pieces roll them in Rice Rawa and do shallow fry.

Tip: This dish should be eaten hot or else you wont enjoy and Yeah dont forget to have this with Red Wine... It tastes Yummy !!!

Kiwi Crush Souffle - Dessert Recipe


Ingredients -

Kiwi Crush - 1 cup

Vanilla Ice Cream - 1 ltr

Lime Jelly - 1 pkt

Kiwi Fruit - 1 or 2 (if available in market)



Method -

First make Lime jelly and let it set. Mix Vanilla Icecream, Lime Jelly and 1/2 cup Kiwi Crush and Blend it nicely. Once this is done, pour Half of the mixture into a glass container. Then randomly put kiwi crush with spoon so it gives some design to this. After this pour the rest of the mixture in container and garnish with Kiwi Crush and Kiwi slices ( if available).

After this, keep the container in freezer and allow it to set.

Serve Chilled - Kiwi Crush Souffle :)

You can Make the same thing with Strawberry Crush, Strawberries and Raspberry jelly :)

Make your own combinations...but remember..colors should match :)



Try and get loads of Compliments ...and this wont take more than 20 mins to make
